Kimchi and Kombucha Make the World Go Round
You had me at kimchi. |
The next time I go to San Antonio I will bring an extra large cooler just to transport all the amazing food that can be found at the farmer's market. One of the magical food stalls had kimchi for sale which I could not pass up. My dad has a special place in his heart for kimchi which is a fermented vegetable Korean side dish. I bought the original Napa cabbage to try with breakfast this week. If you like spicy vegetables then you should try kimchi.
I also found kombucha which is fermented tea that tastes delicious and is very good for gut health. Buddha's Brew is out of Austin and they have some of the best kombucha I have ever tasted. I bought a pint of the cranberry was pleasantly surprised at the smooth taste. The best part was that they had rigged a cooler with spigots for the different flavors. Hopefully, pinterest has a pin that will teach me how to make this.
Is this not cool?! I need to learn how to put spigots on my cooler for kombucha. |

Fun at the Farmer's Market
On our last day in San Antonio the happy couple took us to their favorite farmer's market. I had such a wonderful time perusing the food stalls and listening to the live music. I wanted to recreate the breakfast I had @Tommy's restaurant so I began my hunt for chorizo. My eye caught a sign that read "Praise the Lard" meat company and I knew I was in the right place. A blonde chick sold me 2 lbs. of local chorizo that I am going to scramble with eggs. The hippy in me found her zen at the market full of local produce and meat, fresh juice, and kind people. Y'all need to check this place out!
These colors are so vibrant. |
This chick made my pork dreams come true. |
And I found fresh baked bread. |
Down in San Antonio
This past weekend I drove to San Antonio with my mama to see this cute couple! My darling baby sister has met a most wonderful man who makes her happy and confident in herself. Being a good big sister I of course was a jackass to him until I figured out that he really is freaking Wonderful. Ray, you have my vote of confidence that you will keep my little sister happy and content. Cheers to y'all finding your Happily Ever After! Xoxoxoxo
A way into my heart is through my stomach. Ray suggesting we have breakfast at @Tommy's restaurant showed me that this dude has great taste and knows great food. What a winning combination to have in a man. Everyone needs to drive to San Antonio to eat at this place in the near future. When you go order the freshly made lemonade or sweet tea because these drinks will blow your mind. I ordered the chorizo with eggs and potatoes which I think could help broker world peace. Dear sweet baby Jesus the food was amazing and I cannot wait to go back.
My +Shawntee DesaRay Goff deserves only the best and I think she has found a great partner in Ray which makes me so happy to see. The world can be a dark and horrible place and it is very comforting to see that love can win out in the end. Welcome to the family Ray! I will warn you that we are crazy and nosy as hell. We can be a tad overprotective and we are loud and boisterous but we always help family out when the chips are down.

The Whole30 Day 1
Yesterday I spent hours researching migraine triggers related to food. A simple sausage sandwich from Starbucks caused my husband to have the Mother of all migraines. Forty five minutes after he ingested this tasty morsel his headache began thumping inside his brain. Through my research I found that people prone to migraines should not eat sausage. His migraine lasted from noon till 7:45 pm with all the fun things that a migraine can bring. Nausea, light sensitivity, raging pain, and wanting to wallow in bed for several hours. I, being a wonderful and caring wife have come up with a plan!
We have started the Whole30 protocol this morning and I am uber excited. This protocol is basically a food elimination system which should help us to track Steven's triggers. The only goal for the next month is to get a handle on Steven's migraines. Steven's migraines have a genetic component which means that they are here to stay. However, I am done watching my husband suffer. For the next thirty days there will be no grains, alcohol, added sugar, no dairy, no white potatoes, no MSG, and no baked goods. Also, no whining or cheating. There will be a ton of protein, vegetables, and some fruit.
From my extensive reading I know that the next thirty days will have highs and lows but it is time to suck it up buttercup. Let's do this!

"Damn Fine Chicken"
Thank God we are still getting rain! Today has been utterly delightful because our weather took its meds and is now cooperating. The sky has been full of big rain clouds and there is a slight chill in the air which is very unusual. I love cooking and lounging on rainy days. Did I get out of my adorable pj's? Hell No! I wore no makeup and didn't change my clothes which is freaking wonderful. I did get laundry done and cooked a few meals for this week. Did I mention that it has been raining?
For dinner I made Michelle Tam's (Nom Nom Paleo) damn fine chicken and damn was it fine! I fed myself, Steven, and my brother in law Mark. Now I know I can tackle world peace, I did just make a totally rad dinner. This meal is very easy and quite tasty. After I let the chicken marinate for about 5 hours I popped it into the oven at 375 for 45 minutes. The chicken was plated with green beans and disappeared quite rapidly. I needed an easy meal because my sweet husband was in bed with an end of the world migraine. Tending to a sick spouse does not leave much time to make magic in the kitchen Julia Child style. Steven began to perk up around 7:45 pm and devoured the chicken and green beans which must mean he will live. I am not a doctor but I have hope.

Coconut Macaroons
My dad is the coolest and kindest person I know who loves coconut macaroons. And he had a birthday last week! Being a poor college student I don't have the money for an espresso machine or a Rolex Submariner watch. So I made his favorite cookie which are coconut macaroons.Happy Birthday Dad!
Little nuggets of happiness. |
Even though these are for my dad I totally ate two of them. Not ashamed. |
