About Me

   Hey Y'all my name is Elizabeth and I reside in the bustling metropolis known as Odessa, Texas. By metropolis I mean a small dusty town being overrun by the booming oil industry. I will graduate with my M.A. in Criminal Justice Administration in December 2014 and I cannot wait to go to the police academy. I love food, working out, and messing up my kitchen trying out recipes.

    I created this blog shortly after I had my 2nd ACL transplant. Starting in September 2013 I began researching the paleo lifestyle due to severe gut and fatigue issues. Having never heard of anyone needing a 2nd transplant I wanted a place where others could obtain information. Thus the Tiny Viking was born on a cold December night a few days post-op. This blog outlines my struggles and triumphs throughout this process known as healing and getting on with life.
